Below more about the winemaker and his background:
Dominio de Longaz
Dominio de Longaz is a family winery in the Cariñena region, just below Zaragoza.
The winery owns 70 hectares of vineyard. Everything is picked by hand and placed in boxes with a maximum capacity of 15 kg of grapes. In addition to the 3 grape varieties mentioned above, they also grow a 4th not insignificant variety, the Garnacha.
The vineyards are located at an altitude of 550 meters, the soil is alluvial stones and gravel. This ensures a lower yield due to smaller grapes, but with a greater concentration and higher intensity in flavor. The vinification is very special; our national winemaker in France Ilja Gort and son also seem to do it that way, namely a cold pre-fermentation in oak barrels. Also important: once the entire winemaking process has been completed, the wine goes into the bottle unfiltered, which benefits the taste.
